Why do we sell our bulk beef in two different ways?
At Rebel Hollow farm our main goal is to get great TN beef, pork, lamb, and chicken to your table. We want this process to be simple and easy. You do not have time to figure out all the lingo, become an expert on what cut of meat coes fom what part of the cow, become a math whiz while calculating how much meat you might get ffrom a cow that weighs 1400lb. How much the processing might be based on the hanging weight and all the oter complicated things involved in uying a half cow.
We were spending a astronomical amount of time on the phone trying to help you understand all that and decided that was a waste for both of us!
I sat down with my frined and processor at the time and made a package that is pretty close to what you can expect if you buy a whole cow and go through all the trouble of filling out a cut sheet, figuring ourhow much it wil l cost, what will the processing cost and all that conusing stuff! We made it simple!
in our whole cow package you will receive:
20 ribeyes
18 NY strips
20 sirloins or chicck eyes
12 filets
20 roasts
20 pounds of your choice
100 lbs of ground beef
If you want fat, bones and organs, we can put those in too.
The 20 ounds of your choice can include what ever you want. Things like Brisket, ribs, skirt steak, flank steak, tri-tip, picanah, beef bacon, stew meat, cube steak, your choice. Some people want more roasts. some want more ground beef. Whatever you want.
You know exactly what you will get and exactly how much it will cost. I do not talk about weights on these packages. It is to confusing trying to compare it to anythig else. It is a good amount of meat. All the cuts are great size and bigger than you are use to. Our ribeyes average 1.3 lbs each!
That is currently selling for $3600
Want a half cow package? divide all those numbers in half and it is $1900.
Want a Quarter? divide all those numers by 4 and it costs $975. Those rices ar e subject to change but it is what they are today, February 2, 2026. Hopefully themarket calms down and we can come down some but for now that is what they are.
Now, recenly, we have had some people call and want a "traditional" type of pricing. They have been doing this for years and they want the WHOLE cow. We can do that but it is a lot more expensive and will be a lot more than most other guys because we grow our cows bigger. Most cows are processed at about 1000 lb. We do ours at closer to 1400, sometimes even 1600 lb. That means it is a lot more expensive but you also get a lot more meat. This option you are given a cut sheet, you fill it out and you getexactly what you ask for in whaever sizes and amounts that cow yields. Books will tell you that it will yield 60% of the hanging weight and the hanging weight is about half the life weight. If that is what you want to do you can do that but it will be closer to $5600. You will not know exactly how much until it is all processed. It will be $5.60lb hanging weight plus processing which is 77 cents a l hanging weight pls $55 slaughter fee, $12 waste remobval fee, $105 if you want your ground beef vacuum sealed and you do! , $1 lb for stew meat, $1 lb for cubing if you want cubesteak. Just ask for a cut sheet and we will be happy to send you one. we do need an email for that.
